what i had for dinner..

Welcome! I invite you to read along, do continue to read along, that is! Well, as I am sure you already know by now, this! is my blog! yes! my relaxing fairy name is 'twila' i suppose. well, actually..i am not quite sure yet!

so tonight, i had prepared my own meal for supper. i boiled some rice, i had one of those packets, that boils in the water. i also heated up some coconut oil on the pan, a large enough pan. i always wonder if garlic will work with coconut oil, you know what i mean? almost immediantly i had started to smell the nutty warm scent of the coconut oil being heated up.

i also had diced up a jalepeno and a yellow onion prior, on the chopping board. i also decided to slice up some pineapple as well. i chopped up a clove of garlic, just one clove...and threw them all in the pan. then i added some frozen shrimp. in retrospect, i should of added the shrimp first because it sweats out most of the frozen part, and therefore leaves alot of water. next time i put shrimp first them drain it. i also added some snap peas.

then i had taken some time to make a glaze or marinade drizzle, using a few items. i had gotten this citrus flavored soy sauce, so i put some of that in a bowl. i also added lime juice and honey, and a squeeze of ginger and cilantro. i also added some sesame oil. using a spoon i whisked it all and i threw some sesame seeds on the shrimp and snap peas. then i drizzled the marinade over after the shrimp cooked up a bit. i then put the rice in the pan. i shook on some crushed red pepper flake as well.

i had taken a pic of the finished result. perhaps i will share it tomorrow.

i hope i am not forgetting any more ingredients!??! salt and pepper yes. it was a good, light meal.
